Hello,
When I create a volume with the GUI, I have to choose NAS or SAN.
But after creating it I can't see anyware if the volume is SAN or NAS created.
How can I see how the volume was creates ?

You can't. This is question about intended usage. Wizard will set some options differently, depending on it; each of these options can be changed independently at any time also after initial volume creation.
This question is there to set some recommended defaults, nothing more.

Do you know what options are different when you choose NAs or SAN ?

I do not have exhaustive list. Some that come in mind are snap reserve, fractional reserve, automatic snapshot creation. Possibly space reservation.
