I'm curious if there's plans for a performance analysis class for 8.1+

There are new options with 8 and I'd like to take a class that includes them as well.

How about those of us using Snaplock that are stuck with 7-mode?

Performance Analysis on Data ONTAP 7-Mode is due out earthe first quarter of 2014. The fundamentals WBT will be a pre-req for it also.
