I know there are a lot of discussion on using NFS or iSCSI.
In MS Exchange deployment, do you have any particular concerns by using NFS for all needed database and logs ? what is your recommendation, and why?

Exchange databases are not officially supported on NFS datastores (via Microsoft).
Technically it works, but they currently only support block based protocols and specific SMB 3.0 configurations.
