I want to avoid modifying the access times of files & have the chance to run it against a DR snapmirror target. If I export via NFS a read-only snapshot, any issues?

A snapmirror target is read-only unless you break the mirror. You can safely mount (if in cDoT) and export/share a live target without taking a snapshot first. If the snapmirror is broken off, allowing the target to become writable, then yes, taking a snapshot of the target and exporting the snapshot would serve the same purpose.
