1. My understanding is SnapMirror/SnapVault will not take much storage IOPS. Correct?
2. How much CPU resources could be taken by SM/SV on the respective local or destination cluster?

Snapmirror/Snapvault are based on the Snapshot Technology, so this is very efficient.
I don't know if they are any existing Values/Graph/Data about. If you use Snapmirror with Network compression more CPU ressources are taken.
AFAIK, Snapmirror/Snapvault is not a priority when it comes to resources. The storage throttles the service when it detects any performance issues.
