Not sure about the details behind your question (e.g. are we talking about applications installed inside guest VMs, running on top of ESX 5i?), but in general it is supported.

You mean to protect your VMs ? Did you check OnCommand 5.0 ?

AFAIK For SQL/Exchange/Oracle you have a support from SMSQL, SME and SMO.

I used  interoperability, but did not find SNAPMANAGER:(

The default-view is SAN. You have to change it at the top of the Page.
