With the gen 2 CNA we have a copper version available (part# X1140)

This can be connected to e.g. the Nexus 5k via a Twinax copper cable.

Are these cable included with the CNA, or should it be configured seperately?

What is/are the part# of the Twinax copper cables?

The X1140 does not include cables.  It is a dual port card, requires two cables per card.  Use either the cisco or brocade twinax cables
