We are planning to push out Data OnTAP EDGE to several of our remote offices. Is it possible to set up the Data OnTAP-v Installer here at our main headquarters and have it manage each EDGE installation? Or is it a better practice to have an Installer VM at each location? Assume that all VM's are connected to the same vCenter server.

I would have at least one per vcenter, although you could just use one.
You would probably be better off with one per location. The actual ontap-v ovf file is embedded in the installer, which gets pushed out during the vm setup wizard.
